Spirulina is a natural blue colour derived from dried biomass of Arthrospira platensis. The main colouring pigment phycocyanin plays a critical role in the photosynthesis of cyanobacteria. This natural colour is suitable for food applications with a PH>5 such as frostings, ice cream and frozen desserts, dessert coatings and toppings, beverage mixes and powders, yogurts, puddings, custards, cottage cheese, gelatin, breadcrumbs and likewise. Spirulina is a water soluble natural colour pigment. Though Spirulina has been a popular colouring agent, it has only recently been approved for use in the United States (select applications).
