Botanical Name: Trigonella foneum-graecum
Fenugreek is an annual plant in the family of Fabaceae. Its seeds are a common ingredient in dishes from the Indian subcontinent. Fenugreek Oleoresins are obtained by the solvent extraction of dried seeds of Fenugreek, Trigonella foneum-graecu. The product has the characteristic aroma of fenugreek. It is sweet initially, but has a bitter aftertaste, typical of fenugreek. It is a dark brown, viscous liquid.

The method of solvent extraction uses a separation solvent, which is generally non-volatile has a high boiling point and is miscible with the mixture, but doesn’t form an isotropic mixture as a medium to extract essential active elements from spices.
